treat yourself to this delicious mediterranean orzo salad. served chilled, it tastes so good, you’ll want to dip into it with some i won! chips.

orzo salad with feta

ingredients

  • orzo pasta
  • asparagus
  • charred sweet peppers
  • herbed feta cheese
  • fresh baby spinach
  • sea salt, cracked black pepper to taste

preparation

  • cook, drain and chill your orzo pasta.
  • grill the asparagus with your sweet red, yellow or orange peppers.
  • wash, drain and dry your fresh baby spinach.
  • add all ingredients to the chilled orzo pasta.

runners know that after a long run, you need to fuel up and replenish those hard-working muscles. you need nutrient-dense foods with enough carbs, protein and fats to aid in your post-workout recovery.

here’s one suggestion from i won! organics ambassador and nutrition health coach, edith agoston that we like to think of as a redefined huevos habaneros:

i sautéed some onions and added in organic refried pinto beans, then fried a pasture raised egg from @greenbowfarm and seasoned it with sea salt, pepper and hungarian paprika. (i always have a mishap in this step!) then i added in half of an avocado, sunflower shoots from my local @seattlefarmersmkts, a scoop of island salsa from @traderjoeslist and some of the bbq flavored tortilla chips from @iwonorganics.

packed full of healthy carbs, fiber, good fats and of course, protein, this recovery meal is exactly what a runner needs after a grueling workout. edith likes to buy local, organic foods and incorporates this healthy way of eating into her overall fitness program. she told us:

i stay healthy by listening to my body, drinking ionized alkaline water, eating local seasonal and organic produce that i buy at my local farmer’s market, sleeping well, practicing meditation and of course, getting plenty of exercise!

besides running, edith enjoys biking, swimming, and paddle boarding, and she’s been practicing bikram yoga for the past 15 years. for edith, that #iwonfeeling is all about staying active and living life to the fullest. she told us:

i am most happy when i feel that i am following the correct path, the path that was intended for me. these days that means connecting with more people in the health and wellness world, and living my healthiest life, spending time on the beach in west seattle with those closest to me, continuing to learn and improve my skills as a health coach, and nourishing my body with nutrient-dense foods.

round these parts, when it’s time to celebrate, out come the chips and dip. it’s such a perfect combo they had to dedicate one day a year to it just to celebrate. so happy national chip and dip day!

chips and dip are about as american as you can get. back in the day, making dip for your chips meant opening up a packet of lipton’s onion soup mix and adding it to a tub of sour cream. some people got a bit fancy and added cream cheese to thicken up the dip, others added chives and red pepper. it was the beginning of an all-american favorite and the genesis of a snacking tradition.

where’s the dip?

the superbowl wouldn’t be the same without your favorite dip. christmas would be amiss without dip. birthdays and new year’s just wouldn’t have the same crunch without the necessary dip.

when you’re locked in your dorm room studying all night, you’re going to need some killer snacks to keep you fueled and awake. i won! ambassador grace ling likes to make food art to keep her inspired and creates some of the most colorful meals you can find.

for this healthy study snack, grace used our cinnamon french toast as her muse and cinnamon as the main flavor. she told us:

these taste like cinnamon on toast with a crunchy texture. when you open the bag, there’s the sweet aroma of a bakery. the texture is bold, crunchy, and thick great for dipping into this healthy study snack.

grace developed a taste for staying active when her mother started paying her $6/hour to go to the gym with her. she told us:

after a few months, I went from being one of the slowest people at my school to the fastest runner. i went on to become a nationally ranked runner in high school, and I also run for the division 1 cross country and track team.

reaching the finishing is just one way grace gets that #iwonfeeling. she says, “it’s knowing I put my best effort into a race or exam, and made the most out of every opportunity to improve.”

following a healthy lifestyle is often a choice but sometimes it’s a necessity as in the case of i won! organics ambassador megan tossi. diagnosed with crohn’s disease at a very young age, megan found traditional medicine only aggravated her condition.

i have tons of determination and love to prove others wrong. despite all this, my life was a wreck. i could barely eat or drink anything. i couldn’t keep food in because of how much pain it gave me. all i wanted to do was exercise because it helped me feel better. but i began to notice that i grew tired faster, and surfing became way harder for me. this realization depressed me. surfing is something i really enjoy.

so she turned to holistic healing and has found a way to manage her disease and live life the way she wants to – surfing, skateboarding, weightlifting, playing basketball, and creating delicious recipes for her instagram followers like this one for mango salsa.

I changed my mindset and am starting to enjoy life more again.

sweet mango salsa

organic ingredients

  • 1 cup of diced tomato
  • 1 diced mango
  • 1 diced jalapeño without seeds
  • 2 handfuls of cilantro
  • ¼ cup of lime juice (2 limes)
  • 1 tsp of honey
  • 2 pinches of salt

preparation

  • put the cilantro in a blender and blend until chopped.
  • combine all ingredients in a bowl and mix.
  • add a little at a time into a blender and pulse for desired consistency.
  • place in a separate bowl and add more until you do blend the whole batch.

organic ingredients

  • shredded iceberg lettuce
  • black beans
  • sweet corn niblets
  • orange bell peppers
  • avocado
  • cherry tomatoes
  • grated cheese

dressing

  • chopped cilantro
  • fresh lime juice
  • extra virgin olive oil
  • minced garlic
  • minced onions
  • salt & pepper
  • optional: pinch of stevia for a sweeter dressing

preparation

  • shred the lettuce and fill a bowl about a third of the way up.
  • chop, slice and dice your veggies just the way you like them and arrange on top of the lettuce.
  • mix up the dressing and pour over your salad (about 1 tbsp per serving).
  • sprinkle with the grated cheese.
