healthy chocolate sunbutter crunch

one of the secrets to eating healthy is to take your favorite naughty foods and make them deliciously good for you.

peanut butter and chocolate is one famous duo that has been tantalizing taste buds for decades. so here at the i won! kitchen we took those basic ingredients and created something even better. introducing our recipe for:

healthy chocolate sunbutter crunch

we stayed away from any kind of nut butter, especially peanut for obvious reasons, and used sunflower seed butter instead. spread each cracker with sunbutter and add just a drop of honey to sweeten and sandwich together. all ready for their chocolate bath.

after sandwiching two crackers together with sunbutter, dip them into the melted, organic chocolate. this part’s a bit tricky and messy. but then again, it’s chocolate, so who cares!

place chocolate coated crackers on a flat plate or cookie sheet and place in the freezer for a few minutes to harden. the saltiness of the crackers, the sweetness of the chocolate, and the nuttiness of the sunflower butter is a match made in heaven.

you’ll have a hard time waiting those few minutes, but once you bite into these crunchy, chocolatey, nutty treats, you’ll be hooked! all it takes is four ingredients and a few minutes of your time, and you’ve got a delicious, healthy, organic snack chockfull of plant-based protein and vegan ingredients suitable for any diet.

ranch veggie burgers

ranch veggie burger

nothing says ‘summer’ quite like a burger, and this summer we’re re-inventing the meaning of the word by going plant-based all the way to the grill! this ranch flavor-inspired vegan burger is just the thing for those hot summer days by the pool, hanging out with the kids and the rest of your family and friends.

for this recipe, we got a little help from one of our i won! organics ambassadors, laura arreola, who was kind enough to share this delicious creation using our i won! ranch flavor protein chips. check it out:

ranch veggie burgers

• 1 bag i won! ranch protein chips, finely crushed
• ½ onion
• ½ zucchini
• ½ large carrot (or 5-7 baby carrots)
• ½ -1 tsp garlic powder
• 1 can (15 oz) chickpeas
• 1 tbsp chopped fresh parsley
• 2-4 tbsp ranch dressing of choice (i used the vegan brand follow your heart)
• ½ cup oat flour
• salt & pepper to taste (i personally didn’t add any!)
• toppings & buns of choice

1. heat a large skillet over medium heat and preheat oven to 375 degrees. line a baking sheet with parchment paper. *if you don’t have parchment paper, it’s ok
2. add onion, zucchini, and carrot into food processor or high-speed blender (i used my nutribullet) and pulse until veggies are finely chopped, place in mixing bowl
3. add rinsed chickpeas to same food processor/blender and pulse until almost all chunks are gone (a few are okay), add to mixing bowl as well.
4. add parsley, garlic powder, ranch dressing, crushed chips, and oat flour to the bowl and mix everything together well.
1. if it is too wet, go ahead and add more oat flour.
2. if it is too dry, add in more ranch dressing
5. taste mixture and add salt and pepper and/or more garlic powder to taste.
6. form into 4 patties and place on lined baking sheet.
7. cook for 30-40 minutes until the patties are lightly browned and feel very dry to the touch. i know it seems like a long time, but these patties have a lot of moisture in them that needs to cook out to hold their shape well and taste just perfect!
8. (optional) add cheese of choice during the last few minutes in the oven to melt.
9. serve however you would like and with whatever toppings your lovely heart desires!
leftover burgers will keep in the fridge for up to a week and can also be frozen for up to a month

a great summer treat to make at your next bbq. eating a plant-based diet is nothing new for laura. she grew up in a 95% vegetarian household and is a plant-based fitness enthusiast who loves running. she now works at the college of public health and human sciences in support of healthy children and families. she told us:

i believe nourishing my body with whole foods is what has allowed me to train hard, recover quickly and feel my absolute best!

laura is passionate about cooking and makes her diet a priority, choosing plant-based whole foods to stay healthy. she knows it’s the only body she has, so she wants to nourish it and treat it well. she describes that #iwonfeeling as:

cooking healthy, plant-based foods and feeding them to my family and friends and watching them love it! i know how amazing good nutrition makes me feel, and I feel so happy imparting my knowledge and passion onto those i love.

they gave it a little crunchy punch to my taste buds!

eating the rainbow

the thing about eating healthy is making sure you’re getting enough fresh fruits and vegetables every day. one trick is to look at the food on your plate and ask yourself if it’s colourful enough to eat. if not, how can you add more color to your food?

here’s one idea from i won! organics ambassadors ashley and brittney from @twinskitchen. they like to ‘eat the rainbow’ every meal. with yummy fresh ingredients and an added protein crunch from our sea salt crackers, this is one plant-based meal to make any vegan proud. check it out:

eating the rainbow from @twinskitchen

  • chickpeas
  • ginger and garlic marinated tofu
  • sautéed kale
  • bell peppers
  • spring mix
  • avocado
  • spiralized carrots
  • i won! organics sea salt protein chips

  • assemble ingredients into large salad bowls and use your inner creativity to make a beautiful arrangement of colourful ingredients. it’s that simple, and tons of fun.

following a healthy lifestyle is something twin sisters ashley and brittney love doing every day. they founded @twinskitchen on instagram about five years ago as a creative outlet for their artistic passion and love for healthy food. they believe staying healthy is all about “balance and mindset,” and they “love experimenting with different recipes to make it fun.” they told us:

overall, listening to your body is the best thing you can do to keep a positive mind and healthy soul.

not surprisingly, @twinskitchen has two i won! moments to share with us:

we get that #iwonfeeling after an intense workout when we pushed through on a day we didn’t feel like going to the gym. but also that #iwonfeeling happens when we make someone smile, whether it be through a gesture of kindness, a simple compliment, or a listening ear. it’s the little moments like that in life that count.

what runners eat to refuel

what runners eat to refuel

runners know that after a long run, you need to fuel up and replenish those hard-working muscles. you need nutrient-dense foods with enough carbs, protein and fats to aid in your post-workout recovery.

here’s one suggestion from i won! organics ambassador and nutrition health coach, edith agoston that we like to think of as a redefined huevos habaneros:

what runners eat to refuel

i sautéed some onions and added in organic refried pinto beans, then fried a pasture raised egg from @greenbowfarm and seasoned it with sea salt, pepper and hungarian paprika. (i always have a mishap in this step!) then i added in half of an avocado, sunflower shoots from my local @seattlefarmersmkts, a scoop of island salsa from @traderjoeslist and some of the bbq flavored tortilla chips from @iwonorganics.

packed full of healthy carbs, fiber, good fats and of course, protein, this recovery meal is exactly what a runner needs after a grueling workout. edith likes to buy local, organic foods and incorporates this healthy way of eating into her overall fitness program. she told us:

i stay healthy by listening to my body, drinking ionized alkaline water, eating local seasonal and organic produce that i buy at my local farmer’s market, sleeping well, practicing meditation and of course, getting plenty of exercise!

besides running, edith enjoys biking, swimming, and paddle boarding, and she’s been practicing bikram yoga for the past 15 years. for edith, that #iwonfeeling is all about staying active and living life to the fullest. she told us:

i am most happy when i feel that i am following the correct path, the path that was intended for me. these days that means connecting with more people in the health and wellness world, and living my healthiest life, spending time on the beach in west seattle with those closest to me, continuing to learn and improve my skills as a health coach, and nourishing my body with nutrient-dense foods.
